Recipe: Banana Bread

How many banana bread recipes are there? Geez, Soirée, do you really need to share your banana bread recipe? Here's the thing, I've tried other banana bread recipes including one from Cook's Illustrated and I've always returned to this recipe that I've used since I was a teenager.

Grandma's Banana Bread

  • 1/4 cup butter
  • 1 cup (scant) sugar
  • 1 egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • Salt to taste
  • 4 super ripe bananas, beaten

Banana bread. Recipe makes one loaf but it is easily doubled to make two loaves.

Heat oven to 350. Cream butter and sugar together. Add egg and beat well. Sift flour, soda, and salt together. Add a third flour mixture to the sugar mixture and then a third the bananas. Alternate adding the rest of the flour mixture and bananas. Mix well after each addition. Pour batter into an oiled loaf pan, smooth top, and bake for about an hour. Makes 1 loaf. Easily doubles.
