I highly recommend Harvey Ussery's book The Small-Scale Poultry Flock: An all-natural approach to raising chicken and other fowl for home and market growers. It's my hands down favorite, go-to book. His approach is practical, holistic, and focused on folks' doing for themselves. Check out the bit below from his chapter on butchering poultry. The chapter later includes some of the most detailed pictures ya can find in any book. His website (themodernhomestead.us) is a terrific resource too.
